Ingredients
- 2 red grapefruit, peeled and skinned individual slices
- 1/4 cup macadamia oil
- 2 Tbsp lime juice Himalayan salt ( coarse)
- 1 ripe avocado, pitted and sliced
- 1 large or two small fennel bulbs, sliced thinly
- 1 very small handful mint leaves, julienned
- Freshly ground black pepper
- Handful dry roasted walnuts
- 1 tsp cracked coriander seeds ( optional)
- Fennel fronds for garnish

Step by Step Instructions
Step 1
In a small bowl whisk together the oil, lime juice, a few tablespoons of grapefruit juice and generous pinch of salt.
Place the sliced avocado in a bowl and pour some of the dressing over it and toss gently to coat.
Step 2
In a separate bowl mix sliced fennel, mint, grapefruit slices and the rest of the dressing.
Toss well and put in the serving bowl/ plate. Decorate with coated avocados, dry roasted walnuts and fennel fonds.
