Ingredients

  • 2 red grapefruit, peeled and skinned individual slices
  • 1/4 cup macadamia oil
  • 2 Tbsp lime juice Himalayan salt ( coarse)
  • 1 ripe avocado, pitted and sliced
  • 1 large or two small fennel bulbs, sliced thinly
  • 1 very small handful mint leaves, julienned
  • Freshly ground black pepper
  • Handful dry roasted walnuts
  • 1 tsp cracked coriander seeds ( optional)
  • Fennel fronds for garnish

 

Step by Step Instructions

Step 1

In a small bowl whisk together the oil, lime juice, a few tablespoons of grapefruit juice and generous pinch of salt.

Place the sliced avocado in a bowl and pour some of the dressing over it and toss gently to coat.

Step 2

In a separate bowl mix sliced fennel, mint, grapefruit slices and the rest of the dressing.

Toss well and put in the serving bowl/ plate. Decorate with coated avocados, dry roasted walnuts and fennel fonds.
