Ingredients

  • 1 cup organic green lentils , soaked for an hour, rinsed and cooked
  • 1 1/2 tbsp coconut oil
  • 1 medium onion , chopped
  • 1 green organic jalapeño pepper , minced
  • 5 organic garlic cloves , minced
  • 1/2 inch ginger , minced
  • 1 1/2 tsp cumin powder
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala powder
  • 1/8 tsp coriander powder
  • 0,75 tsp Himalayan salt
  • 3 medium organic tomatoes , chopped
  • Curry leaves for serving

Step by Step Instructions

Step 1

Sauté onions in coconut oil until translucent

Add garlic, ginger and jalapeño pepper and sauté for an extra min

 

Step 3

Add cooked lentils and let it simmer for another 10 min( add extra water if needed)

 

Step 2

Add all the seasonings and mix well

Add chopped tomatoes and 1 cup of water and simmer until tomatoes soften

Step 4

Serve over cooked brown rice

Sprinkle minced curry leaves
