Ingredients

  • 1/2 onion, chopped
  • 3 Tbsp coconut oil
  • 1/2 red bell pepper, chopped 
  • 3/4 head of small cauliflower, cut into florets
  • 14 oz firm tofu, crumbled
  • 1 small box Portabella mushrooms sliced
  • 1 1/2 tsp turmeric powder
  • 1 1/2 tsp cumin powder 1 tsp coriander powder
  • 1 1/2 tsp Himalayan salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes 2-4 kale leaves, julienned (also could use spinach, collard greens, chard) 

 

Step by Step Instructions

Step 1

Sauté onion in coconut oil (also could use avocado or grape-seed oil). 

Add red bell pepper. 

Cook 5 min

Step 3

Add mushrooms and all the seasonings and sauté 2 min

Add kale and sauté another minute until the leaves get wilted.

Serve with fresh tomatoes and avocado

Step 2

Add cauliflower and tofu, mix well sauté another 7-10 min until cauliflower ” is a little bit browned
