Ingredients

  • 4 medium size organic zucchini
  • 1 organic green bell pepper
  • 1 organic leak
  • 1/2 organic onion
  • 4 organic garlic cloves
  • 3 tbsp organic olive oil
  • 1/2 tsp organic oregano seasoning
  • 1/2 cup organic toasted pumpkin seeds
  • 1/4 cup organic toasted pumpkin seeds pesto
  • himalayan salt
  • freshly ground black pepper

 

Step by Step Instructions

Step 1

Cut zucchini in 1/2 inch circles

Cut bell pepper in 8 wedges

Slice onion into thick half moons

.

Step 3

Sprinkle with salt, pepper and oregano seasoning

Roast in 400 F oven for 20-30 min until zucchini gets soft but not mushy

 

Step 2

Slice leak into circles

Cut garlic cloves in halves

Drizzle olive oil

Step 4

Put all roasted vegetables into Vitamix, add some boiling water and blend 20-30 s

Serve with toasted pumpkin seeds and toasted pumpkin seed pesto
